Bite-size Banana Muffins!

Hello Friends-

Alright- so this morning I took a stab at mini banana muffins. Found my handy dandy mini muffin tray and mini muffin liners to make these adorable little treats. Again, to make them “healthier” I did not add ANY type of sugar or sweeteners and no oils and or butters. I added organic apple sauce to moisten the muffins and since the bananas I used were very ripe, no added sugar needed. I also added some pecans to give them a crunch. I must say these were very tasty but this time as well they did not rise as much. I wonder what I am doing wrong. They taste awesome and little A absolutely enjoyed nibbling on one this morning. These could be a perfect little snack to throw into your toddlers lunch boxes or you can have them for breakfast or snacks. Hope you all enjoy this!

Here is the recipe:

Mini Banana Muffins
makes 30 mini muffins

2 to 3 brown bananas, peeled and mashed
¼ cup sugar
¼ cup natural applesauce
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon kosher salt
1 cup flour

Preheat oven to 350 degrees. In a large mixing bowl, add bananas, sugar, egg, and applesauce and mix well.

Stir in baking soda, powder, salt and flour. Mix well.

Line the mini muffin tins with paper liners. Fill each muffin cup 2/3 way full. Bake for 15 minutes. Cool. Enjoy 🙂 .

  1. I’ve made lots n lots of muffins n cup cakes, healthy n not so healthy n found out that when not using butter they don’t come out the same They won’t rise as much for some reason n won’t be as fluffy So since I don’t make them that often anymore I figure that once in a while the not so healthy ones r the winners for me lol If u find a way to make them rise n taste as good as the unhealthy ones plz let me know I’d rather eat those!
Thanks again for a wonderful post!

    • I Know! Lol. If it is an occasional treat bring me some good ole sugary and buttery goodness. But in my quest for “healthy” alternatives I came across these- minimum ingredients, quick and easy- I will definitely look around to see how to make them rise up and more fluffier 🙂 .

  2. These look great and I love the fact that you did not use sugar (thats why they didn’t rise) and added pecans. I will try these for sure this weekend. Now that my baby is almost a toddler, I can get more creative with things he eats :). Also, try making banana pancakes. All you need is ripe bananas and eggs. Just mix them together and they made yummy pancakes :).

    • I am SO glad you are reading these posts Shahr. Please keep reading and give me feedback. Believe it or not my next recipe will be for the pancakes so lets see what I come up with. Thanks for the easy tip though, will give it a shot 🙂
